Sweet Potato Gnocchi & Leek Soup
This creamy soup serves as a great meal for family dinners and pairs beautifully with lightly toasted baguette slices for the perfect crunch! Instructions:
Sautee the chopped up leeks in oil (until softened).
Add the celery (chopped) + 3-4 minced garlic cloves for about 1 minute to the pan.
Add 2-3 cups of water.
Allow all the condiments to be incorporated for about 15 minutes.
Add the sweet potato gnocchi and cook for 10 minutes.
Add the remaining water and bring to a boil.
Add 1 can of coconut milk and allow to cook for about 5 minutes.
Garnish with thyme and add salt/pepper. Add a spoonful or sour cream to create a creamy taste!
