No-Bake Strawberry Roulade

Ingredients

  • 150g (5.3 oz) biscuits

  • 15g (1/2 oz) cocoa powder

  • 1 banana

  • 50mL (1/5 cup) melted butter

  • 50g (1.76 oz) honey

  • 200g (7 oz) cow cheese

  • 150g (5.3 oz) strawberries

Instructions

  1. Mash the banana with a fork.

  2. Place 150g of biscuits in a bag. Using a rolling pin, hit the bag to crush them into small pieces.

  3. Add crumbs to mushed banana. Add 15g of cocoa powder and mix with a spoon until well-incorporated.

  4. Using a spoon, spread out mixture onto a piece of plastic wrap. Add another layer of plastic wrap on top and roll to desired width. Remove top plastic wrap layer.

  5. Add 50mL melted butter and 50g of honey to 200g of cow cheese. Mix well using a whisk, immersion blender, or hand-held blender. Consistency should be smooth and creamy, with no large lumps.

  6. Spread cream over crust using an offset spatula or spoon.

  7. On the longer side of the crust, add the strawberries over the cream.

  8. Use the plastic wrap on the bottom to help roll up the roulade. Make sure to roll it up tightly enough that everything stays put, but not so tight that the cream is squeezed out. Tuck in ends of wrap and place the roulade in the fridge for 2 hours.

  9. Remove the wrap. Cut the roulade to serve. If roulade begins to soften too much, place it in the fridge for a few additional minutes. Keep chilled.
