Fettuccine with Chicken and Shiitake Mushrooms

You can never go wrong with pasta as a meal. It's a crowd favorite and easy to prepare. Considering the number of pasta recipes available and its familiarity with Italian-American cuisine, it’s no wonder why it has become so popular. Aside from it being very quick and simple to prepare (it takes about half an hour in total), this recipe is also delicious. Even the pickiest of eaters will be impressed.

Ingredients:

  • 1 piece chicken breast

  • 4-6 oz. shiitake mushrooms

  • 1 pkg. fresh Buitoni fettuccine pasta (preferably fresh or homemade fettuccine pasta if not available)

  • 1/2 small onion

  • 1-2 cloves of garlic

  • fresh parsley

  • oregano

  • salt and pepper

  • olive oil (2-4 tablespoons)

  • 1/2 cup grated parmesan cheese (or more, if desired)

Instructions:

1. In a medium saucepan, bring about three quarts of water to a boil and add a dash of salt. When the water is boiling, add the fettuccine.

2. In a large saucepan, add two tablespoons of olive oil. Put over medium heat.

3. Cut the chicken breast into small cubes. Add to large saucepan and cook for 4-6 minutes or until the chicken is golden. Make sure to season with a dash of salt and pepper. Set the chicken aside in a separate bowl and cover with aluminum foil.

4. Add 1-2 more tablespoons of olive oil. Chop the shiitake mushrooms into slices and add to the same saucepan, keeping it over medium heat. SautΓ© until the water has evaporated and the mushrooms have cooked (about 5-6 minutes). Season with salt and pepper.

5. Finely chop half a small onion and add to the saucepan. Allow it to brown along with the mushrooms. Add 1-2 cloves of minced garlic. SautΓ© the onion, garlic, and mushrooms together for a minute.

6. Add the chicken to the large saucepan. Season with oregano and finely-chopped fresh parsley. Allow chicken to simmer on low for another minute before turning off the heat.

7. When the pasta is boiled, with a spider strainer, put the pasta directly into the other saucepan (do not rinse it in cold water beforehand).

8. Fold the chicken and mushrooms into the pasta. Add 1/2 a cup of grated parmesan cheese.

9. Top off with extra cheese or parsley and drizzle a tablespoon of olive oil on top. Serve warm.
