Vegetable & Chicken Curry

Vegetable and chicken curry is a quick and fresh dish to have during the week when you need to feed a hungry family. This is a simple one pot vegetable and chicken curry dish that is simply impossible to resist. Not only is it delicious, but is also an easy recipe that you can make all in one pot in 30 minutes. It is made with organic free range chicken, a mix of vegetables, coconut milk, curry powder, and fresh herbs. This dish is known to be saucy, flavorful, and so versatile.

Ingredients:

  • 300g organic free range (antibiotic free) chicken

  • 1 onion, chopped

  • 3 cloves garlic, minced

  • 3 cm ginger, grated

  • 2 tbsp curry powder

  • 1 can chopped tomatoes

  • 1 can coconut milk

  • 1/2 head broccoli

  • 1 zucchini

  • 1-2 carrots, peeled & cut

  • Handful of fresh spinach

Instructions:

  1. In a large saute pan, heat oil over medium-high heat. Add onion, garlic & ginger and saute for 3-5 minutes.

  2. Add in the sliced chicken and curry powder, and cook for about 5 minutes.

  3. Add 1 can of chopped tomatoes, along with the vegetables and cook for another 10-15 minutes.

  4. Lastly, add in 1 can of coconut milk

  5. Continue cooking until the vegetables are fully translucent and the chicken fully cooked.

  6. Before serving, add in spinach and allow 1-2 minutes to wilt.

  7. Serve alone or with brown rice or you may also serve with a side of cauliflower gnocchi for Paleo or Whole30 diet
