Mushroom Cream Soup

Mushroom cream soup is a rich and velvety soup that is sure to become a favorite comfort food. It all starts with sautéed onions and mushrooms, which are then simmered in a broth with potatoes until everything is tender and flavorful. The soup is then pureed to a silky smooth texture, and finished with a generous amount of heavy cream to add a luxurious creaminess. The resulting soup is earthy and hearty, with a subtle umami flavor from the mushrooms, and a silky, velvety texture that is sure to warm you up from the inside out.

Serve it as a starter for a dinner party or as a main course with warm, crusty bread for dipping.

Ingredients:

  • 400g mushrooms

  • 5-6 potatoes

  • 1 or 1/2 an onion

  • 600 ml water or chicken stock

  • wunflower or avocado or olive oil

  • 1 cup whipping cream

  • dry parsley

  • parmesan cheese

Instructions:

  1. Peel and chop the onion. Heat the oil in a frying pan and fry the onion on medium heat for five minutes or until golden.

  2. Cut mushrooms and add them to the onion in the pan. Salt and fry for 8-10 minutes so that the mushrooms brown and enhance their flavor.

  3. Pour 600mL of water or chicken stock into a saucepan and bring it to a boil. Peel and wash the potatoes (to remove excess starch) and cut them into medium-sized pieces, no larger than a walnut. Add to the saucepan. Salt to taste and cook until the potatoes are completely softened and tender.

  4. Add the previously fried mushrooms and onion to the pan. Mix. Let it cook for 5 more minutes

  5. Remove the saucepan from the stove and puree the soup with a blender for 2-3 minutes or until completely smooth.

  6. Mix in heavy whipping cream and bring the soup to a boil again, stirring constantly, and then set it aside. The soup is ready!

To serve:

  • Use mushrooms slices to decorate! Fry several slices of mushrooms in a pan on both sides. For the perfect slices, don’t let them fry too long, or they will darken and become ugly, but don’t fry them over low heat either - they will become soggy and wet! Sautéing them over medium heat with some oil is perfect to add some delicious flavor to the mushrooms. Place the fried mushrooms slices over the soup, and add herbs on top to decorate.

  • Other topping ideas can include parmesan cheese, parsley, croutons, additional spices.

  • Serve with fresh bread for dipping!
