Easy Strawberry Cheesecake

Indulge in the delicious flavors of fresh strawberries and creamy cheesecake in every bite of this irresistible puff pastry. With its flaky golden crust and luscious filling, this dessert is sure to be a crowd-pleaser at any occasion. Makes 8 portions. 

Strawberry cheesecake puff pastry - flaky golden crust filled with creamy cheesecake and fresh strawberries

Ingredients:

  • 150g cream cheese

  • 2-3 tbsp powdered sugar

  • 3-4 tbsp whipping cream

  • 1 sheet of frozen puff pastry, thawed

  • strawberries

  • egg wash (1 small egg & 1 tsp water)

Instructions:

  1. Combine the cream cheese, powdered sugar, and whipping cream in a bowl. 

  2. Cut the puff pastry sheet into eight squares.

  3. Spread the cream cheese mixture onto the squares, leaving a small border (so the mixture does not spill over when it bakes). Add strawberry slices as desired. 

  4. Brush or coat the border of the puff pastry with the egg wash.

  5. Bake at 200C (400F) for 10-12 minutes.

  6. Serve fresh, warm or cold.
