Lime Matcha Brownies

One of my favorite desserts to-date is the Matcha Lime Brownies. These squares of exquisite chocolate are fudgey, gooey, and satisfy all of your sweet needs. The best part? These are made with no refined sugars! All brownie fans can enjoy these delicious treats made with vegan, gluten-free, and dairy-free ingredients.
Crafted with a banana and almond butter base, the nutty, buttery, matcha-lime frosting complements the sweetness perfectly. These are a must-bake if you are a chocolate lover like me!

Ingredients:

Brownies

  • 3 ripe bananas

  • 3 tablespoons almond butter

  • 1/3 cup cacao powder

  • Pinch of salt

  • ¼  tsp vanilla extract

  • 2 tbsp maple syrup

  • Coconut oil for baking tray 

Matcha Lime/Cashew Frosting

  • 1 cup soaked cashews

  • ½ lime 

  • ¼ cup coconut milk

  • 1/3 cup coconut oil

  • ¼ cup maple syrup

  • 1 tsp vanilla extract

  • 2 tsp Matcha

Instructions:

Brownies:

  1. Preheat oven to 350°F (180°C).

  2. Add all the ingredients for the brownies into a food processor. Mix until everything is smooth.

  3. Grease the tray with coconut oil. Pour the mixture into the tray.

  4. Bake the brownies for 25 minutes. When done, let them cool.

Lime & Cashew Frosting:

  1. Add all the ingredients into the food processor. Sift in the matcha powder.

  2. Pulse to mix everything until smooth and creamy. Keep in refrigerator.

  3. Add the frosting on top of the brownies and drizzle melted chocolate on top for extra sweet goodness.
