Yellow/Green Beans Soup with Smoked Pork Loin

With the onset of summer, a number of vegetables are in season. With so much abundance, there are so many recipes to be made! One of the most beloved vegetables in the summer are string beans. This month's recipe is yellow bean soup with smoked pork loin. You'll love the taste of fresh beans and the rich flavor of the broth!

Ingredients

  • 3 lb yellow or green beans

  • 1 sweet onion

  • 3 - 4 carrots

  • 1 red bell pepper

  • 2-3 celery sticks

  • 1 parsnip

  • 2 tomatoes peeled and diced

  • 2 potatoes peeled and cubed 

  • 3 garlic cloves

  • 1 lb smoked pork loin

  • 3 Tbsp oil

  • 1 Tbsp butter

  • 3 L Water

  • Salt 

  • Pepper

  • Sweet paprika

  • Chili flakes

  • Parsley leaves

  • Thyme

  • 1 Tbsp Vegeta ( optional )

  • Sour cream ( optional )

Instructions:

  1. Wash all the vegetables [beans ( cut both ends, then cut them in bite pieces ), onion, carrots  ( if they are organic you have the option not to peel them, since they contain probiotics that are good for the gut), bell pepper, celery, parsnip, tomatoes and garlic]. 

  2. Once the oil and the butter are heated, add the onion to saute until it’s translucent.

  3. Add the sweet paprika and mix with the onion for 1 minute.

  4. Place all the chopped vegetables and the smoked pork loin in the pot, add the remaining seasonings and give it a good stir.

  5. After 10 minutes pour the water and bring it to boil for an additional 30 minutes. Once boiling, add the potatoes reduce heat to medium-low and let simmer for 15-20 minutes. Stirring occasionally. 

  6. I like to add a teaspoon of sour cream in my bowl and sprinkle some fresh cut parsley leaves.
