Sun-kissed Peach Galette

Ingredients
110g butter
70g cold water
200g flour
1/4 tsp. salt
30g sugar
2-3 peaches (fresh or canned)
Instructions
Mix dry ingredients, adding in cold butter cut into small pieces, using a fork to mix it in well.
Gradually add the cold water, mixing the dough well each time.
Wrap the dough in cling film and let it chill in the refrigerator for 30 minutes.
Cut cored peaches into slices. For fresh peaches, sprinkle the slices with sugar in a deep container and let sit for 10 minutes.
On parchment, roll out the cooled dough with a diameter of 35 cm and a thickness of about 5 mm. Transfer it to a baking sheet.
Distribute the peach slices on the surface of the dough, leaving 5-6 cm free from the edge. Fold over the edges to create the crust.
Bake at 180Β°C (350Β°F) for 20-25 minutes. Then, increase the temperature to 200Β°C (400Β°F) for about 10 minutes or until the crust is golden brown.
