Smoked Tofu Tacos Recipe

  • cup chopped red cabbage

  • Β½ cup chopped green cabbage

  • 1 grated carrot

  • Juice of 2 lime wedges

  • 1 teaspoon maple syrup

  • Β½ red onion, thinly sliced

  • Fresh cilantro leaves, chopped

  • Kosher salt (to taste)

  • Vegan yogurt (or regular yogurt), mixed with salt and Mexican hot sauce (to taste)

  • Small tortillas (corn or flour, as preferred)

Instructions

  • Cut the tofu: Stir in the maple syrup,olive oil, salt, garlic powder, cumin and smoked paprika. Use air fryer or oven to cook your tofu. Cook on medium high for 8 to 10 minutes. (The exact timing depends on the tofu brand.)

  • Assemble the toppings: Thinly slice the red cabbage, green cabbage, grate the carrot and place it in a bowl. Spritz with the juice of 2 lime wedges, a little bit of maple syrup, cut the cilantro and red onion and add a few pinches kosher salt. Mix everything together.

  • Topping sauce: Mix yogurt with Mexican hot sauce to taste.

  • Warm the tortillas: Warm and char the tortillas by placing them on an open gas flame on medium for a few seconds per side, flipping with tongs, until they are slightly blackened and warm or use the oven.
