Blueberry Tiramisu
This blueberry tiramisu is a delightful twist on the classic Italian dessert, bursting with fresh and juicy blueberries in every bite. Layers of mascarpone cream delicately flavored with vanilla and lemon zest alternate with sweet ladyfingers, creating a smooth blend of flavors and textures. Ingredients
300g ladyfingers
600mL whole milk
1 jar blueberry fruit spread/jam
Cream:
4 egg yolks
150g white sugar
250g whipped cream
500g mascarpone cheese
1tbsp vanilla or rum
Directions
Mascarpone Cream:
Combine egg yolks and sugar in a bowl, whisking on high speed using an electric mixer for about 8 minutes. Set aside.
Incorporate mascarpone cheese and whisk for about another minute.
In a separate bowl, whisk the whipped cream. Then, fold it carefully into the mascarpone mixture.
Assembly:
Warm the milk up in a saucepan on medium heat until it comes to a near boil.
Dip the ladyfingers in the hot milk. Cover the tray with a layer of ladyfingers.
Spread a generous layer of the blueberry spread/jam out on the first layer of ladyfingers.
Add a third of the mascarpone cream and repeat the process.
Add the final layer of mascarpone and decorate with blueberries, as desired.
Chill overnight (or for a minimum of 8 hours) in the fridge before serving.
