Cinnamon Bun Delight

Ingredients:

Dough:

  • 200g milk

  • 25g dry yeast

  • 75g butter

  • 60g sugar

  • 2 eggs

  • 1tsp salt

  • 500g flour

Filling:

  • 120g sugar

  • 15g cinnamon

  • 30g butter

Cream Icing:

  • 30g butter

  • 60g mascarpone cheese (or cream cheese)

  • 120g powdered sugar

Directions:

  1. Mix yeast and a teaspoon of sugar into warm milk. Stir, cover, and leave it for 20-30 minutes in a warm place to activate the yeast.

  2. Using a mixer, combine softened butter and sugar together in a separate bowl. When the mass begins to whiten, add one egg and then the other. Add in the activated yeast and salt. Gradually incorporate flour, monitoring the thickness. It’s important that it isn’t too tough! The dough should be soft, but shouldn’t stick to your hands. Cover the bowl with a towel and let rise in a warm place, until the dough increases by 1.5/2 times in size.

  3. For the filling: mix sugar and cinnamon in a separate bowl. We will need the butter for greasing the dough later.

  4. Roll out the dough into a thickness of 3-4mm. Cut away excess dough so that it becomes rectangular.

  5. Apply softened butter to the dough with a cooking brush (leaving a 0.5cm border from the edge; this will make it easier to “glue” it together). Add cinnamon sugar mix on top.

6. Roll the dough. Cut the roll into 11-12 pieces.

7. Cover a baking sheet with parchment and separate the rolls, placing them at a distance of about 2-3 cm from each other. Cover the tray with cling wrap and let it rise for another 20-30 min. Preheat the oven to 350F (180C).

8. When the oven is ready, add in the buns and bake for about 25-35 minutes.

9. To prepare the cream glaze: beat the softened butter with powdered sugar and cream cheese for about 2-3 minutes or until smooth.

10. When buns are ready, generously cover them with the cream, which will begin to spread like a filling. This way, the buns will be well-coated with glaze from all sides.
